The name of our restaurant, "New Delhi Diamond's," was inspired by the following considerations. Indian Cuisine varies from region to region since India is a vast country with many ethnic groups and cultures. New Delhi is in northern India; it is also the capital of India. The word "New Delhi" in the name of our restaurant reflects our menu of North Indian Cuisine. The word "Diamond's" in the name of our restaurant stems from the similarity between the preparation of Indian Cuisine to cutting and polishing of a mined diamond rough stone. Diamonds do not show all of their beauty as rough stones. A mined diamond must be cut and polished with great care in order to yield a true gem-quality diamond. Traditional Indian cuisine also has to be prepared with great care and patience with timely additions of distinct spices. Besides numerous industrial applications and use as precious gems, diamonds have been associated with divinity and were used to decorate religious icons in ancient India. Diamonds are believed to bring good fortune. In Western culture, diamonds symbolize fearlessness, virtue, eternity and love. Lastly, the birthday of one of the restaurant’s owners is in the month of April – the birthstone for which is the diamond.

New Delhi Diamond's Restaurant opened in the year 1993 at 106 Green Street in downtown Ithaca, NY. The restaurant is still owned and operated by its founding members who hail from the city of Ludhiana in the Punjab State of India. The owners' intent was to offer Ithacans authentic North Indian Cuisine and they have been successful in their mission. The age-old culinary recipes are prepared in the traditional Indian way. The restaurant has a pleasant and relaxed atmosphere. The menu is diverse and offers vegetarian, chicken, seafood and lamb dishes. Many of the dishes are prepared in a tandoor, a traditional Indian clay oven. The restaurant is open seven days in a week for lunch buffet, dinner and take-out services. The owners cater food for parties as well.
